Bought a Cuisinart cookware set to get non-teflon, looked up how to keep food from sticking but not working!?

I read all sorts of tricks like leaving the food alone for 90 seconds and it will release, use butter instead of oil, super heat the pan, don't super heat the pan. Nothing is working, oil, butter, leaving it alone, not leaving it alone, super heated, not over heated. What am I doing wrong? I don't want to use teflon any more, and I am a pretty decent cook, but this is ridiculous. I feel frustrated because I know they wouldn't sell these things of people couldn't use them properly.

Cooking without non-stick is tricky. First of all the pan gets better when it becomes seasoned. Two it has to have a thick bottom and not a thin one. Thin pans sucks and they always stick. But the trick is heat, steady hot heat. And then oil. You never put oil in a cold pan. Heat the pan then add oil and give it a few seconds. Oil brings the temperature of the pan down if it is not hot enough. If you are cooking steak or chicken or fish, ,oil the pan as well as oil the protein too. This will help a lot. If you get a scorching hot pan, then most times it will work, and I mean scorching hot, cause when you add the protein or veg it will mellow out and you can turn the heat down. The contact of protein,, with heat on oil causes a fast steam reaction that disallows the sticking to the pan reaction. You should hear the sear and get a sizzle. If it does not sizzle when the meat touches the pan it is not ready. Always preheat your pan in advance. It takes practice to use a non stick, stainless steal and thick is the best. Go get a good restaurant supply heavy duty saute pan or a cast iron griddle or pan.
The oil should sizzle and slightly have bubbles before you put the meat in pan.

Get pan super hot
Add oil for a few seconds
Cook meat on the oil surface
Condensing the oil slightly to the center where the heat is helps rather than spreading it out unless you are making a stirfry of some sort.
And when you stirfry add items in layers to the amount of cooking time it needs rather than just dumping them all in at one time. Remember things burn faster so you gotta cook faster and be watchful of what you are cooking so it does not burn. Te get gunk on the bottom off splash some water into the pan and it will burn off. Be very careful that it does not explode on you, this is for cleaning only, and more than a Tbsp of oil could be dangerous, so be sure there is not much oil in pan. This will help separate the meat from pan if you are gonna sauce it anyhow and boiling water in it helps to scrub it out easier.

And you should never fuss with turning the meat until it is done on one side. When the edges turn white it can be flipped. PS instead of oiling the protein you can spray it with nonstick spray also. Just know that on a hotline in a restaurant sometimes they leave saute pans on constantly, and the pans are warm already and tempered. It is like a wok, gotta season the pan. Heat your pan up a few times, then oil it down. Do it again and again.
